    About this recipe: This traybake recipe results in rich and moreish chocolate and peanut butter squares. Think of these like a peanut butter millionaire's shortbread! The shortcrust base is delectable. Makes a delicious treat for the kids, that they're sure to love.

    Ingredients
    Serves: 12 

    • 200g plain flour
    • 150g dark brown soft sugar
    • 110g butter, melted
    • 2 egg yolks
    • 110g plain chocolate chips
    • 150g icing sugar
    • 260g peanut butter
    • 50g butter, melted
    • 1 teaspoon vanilla extract
    • 1 tablespoon milk
    • 5 tablespoons plain chocolate chips
    • 1 tablespoon butter or margarine

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. In a medium bowl, combine the flour, dark brown soft sugar, 110g of butter and the egg yolks. Mix together by hand until everything is well blended, and the mixture is crumbly. Press evenly into a 20x30cm tin.
    3. Bake for 12 to 15 minutes in the preheated oven, until lightly golden.
    4. As soon as the base comes out of the oven, sprinkle the 110g of chocolate chips onto it. Return to the oven for 1 to 2 minutes. Take out of the oven and spread the melted chocolate over the base. Set aside.
    5. In a medium bowl, mix together the icing sugar, peanut butter, 50g of butter and vanilla. Stir in the milk. Crumble the peanut butter mixture over the chocolate layer. Press down lightly.
    6. In a medium saucepan, combine the 5 tablespoons chocolate chips and the butter or margarine. Cook over low heat, stirring occasionally until melted. Drizzle over the peanut butter layer and refrigerate until set, about 3 to 4 hours. Cut into squares.
