Makes: 42 cookies
110g butter, softened
200g caster sugar
120g cooking chocolate, melted
2 teaspoons vanilla extract
1/2 teaspoon bicarbonate of soda
200g plain flour
85g white chocolate, chopped
200g plain chocolate, chopped
4 tablespoons chopped milk chocolate

Preheat the oven to 180 C / Gas 4. Lightly grease baking tray, or line with baking parchment.
Cream butter, sugar and melted chocolate. Stir in eggs and vanilla; beat until smooth. Sprinkle bicarbonate of soda over mixture. Slowly blend in the flour. Fold in the white chocolate, plain and milk chocolate.
Drop the dough by teaspoons onto baking tray about 2.5cm apart.
Bake 8 to 10 minutes. Be careful not to overbake! Let the cookies cool on the baking tray for about 10 minutes, then place them on a wire rack to finish cooling.
