Very Chocolaty Cookies

    This is a very rich and satisfying chocolate cookie, which is studded with three different types of chocolate bits. Fill the biscuit tin with these at work and see how many new friends you'll make!

    Ingredients
    Makes: 42 cookies

    • 110g butter, softened
    • 200g caster sugar
    • 120g cooking chocolate, melted
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 1/2 teaspoon bicarbonate of soda
    • 200g plain flour
    • 85g white chocolate, chopped
    • 200g plain chocolate, chopped
    • 4 tablespoons chopped milk chocolate

    Method
    Prep:15min  ›  Cook:9min  ›  Extra time:10min cooling  ›  Ready in:34min 

    1. Preheat the oven to 180 C / Gas 4. Lightly grease baking tray, or line with baking parchment.
    2. Cream butter, sugar and melted chocolate. Stir in eggs and vanilla; beat until smooth. Sprinkle bicarbonate of soda over mixture. Slowly blend in the flour. Fold in the white chocolate, plain and milk chocolate.
    3. Drop the dough by teaspoons onto baking tray about 2.5cm apart.
    4. Bake 8 to 10 minutes. Be careful not to overbake! Let the cookies cool on the baking tray for about 10 minutes, then place them on a wire rack to finish cooling.

    This is a wonderful rich and smooth cookie. I used squares of unsweetened chocolate that I melted. Mixed the soda with the dry ingredients as in other cookies. Added 2 cups of walnuts. Loved them!  -  05 Jun 2006  (Review from Allrecipes US | Canada)

    This is a delicious cookie! To make them healthier, I substituted yogurt for half of the butter and used whole wheat flour. I also only used bittersweet chocolate chips because those were the only kind I had. This is a really rich, really good cookie.
