Crunchy cinnamon walnut bars

    Once you make these delicious snacks, they will become a firm family favourite. Digestive biscuits are topped with walnuts and a buttery dark syrup, baked. cooled and broken into bars.

    Ingredients
    Makes: 1 25x38cm swiss roll tin

    • 12 digestive biscuits
    • 1 teaspoon ground cinnamon
    • 235g chopped walnuts
    • 225g butter
    • 220g dark brown soft sugar
    • 1/2 teaspoon ground cinnamon

    Method

    1. Preheat oven to 200 C / Gas 6. Grease a 25x38cm swiss roll tin.
    2. Arrange digestive biscuits with sides touching in a single layer to cover the bottom of the tin. Sprinkle over 1 teaspoon cinnamon and walnuts evenly over the crackers.
    3. In a small saucepan over medium heat, combine the dark brown soft sugar, butter and cinnamon. Cook stirring constantly until the mixture begins to boil. Continue to boil the syrup for 3 minutes without stirring.
    4. Remove from heat and pour over crackers. Bake for 8 to 10 minutes in the preheated oven, until bubbly and slightly darker around the edges. Cool completely in the tin. Break into pieces and store in an airtight container at room temperature.

    Be sure to turn the cinnamon side of the graham crackers facing up. Also, any crackers that are not covered in the butter mixture will burn. I bake these in a deeper dish (a cookie sheet with some depth) or a casserole dish, because some ingredients spill on the sides.  -  09 Jun 2009  (Review from Allrecipes US | Canada)

    This was a hit at the football party I took it to last Sunday! Several people asked for the recipe. It has a great buttery taste and is super-easy. The only slight complaint I had was that it does taste just a little bit burned. I think this happened when I was stirring the syrup, probably would have been easier on a gas stove.     So good! Can't stop eating them. I think it helped that I lightly sprayed the cooking sheet before assembling. I followed others advice and baked at 375 for 9 minutes. After about 45 minutes I gently broke them apart and put in fridge to fully set up. Delicious recipe!  -  27 Feb 2014  (Review from Allrecipes US | Canada)
