    About this recipe: A super-delicious cake that is perfect for afternoon tea or dessert. This sponge cake is brushed with butter and dusted with icing sugar and cinnamon. Simple, yet utterly delicous!

    Makes: 1 23cm round cake

    • 125g plain flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 50g margarine
    • 150g caster sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 125ml milk
    • 15g butter
    • 100g icing sugar
    • 1 tablespoon ground cinnamon

    1. Preheat oven to 190 C / Gas 5. Grease and flour a 23cm round cake tin. Sieve together the flour, baking powder and salt; set aside.
    2. In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the egg, then stir in the vanilla and milk. Beat in the flour mixture, just until incorporated. Pour batter into prepared tin.
    3. Bake in the preheated oven for 20 to 25 minutes or until a skewer inserted into the centre of the cake comes out clean. While cake is still warm, spread with butter and dust icing sugar and cinnamon.
