Morning Waffles

    You can make the batter the night before to save time. I sprinkle blueberries or nuts on top just before closing the waffle iron. These make a nice weekend breakfast or birthday surprise!

    Serves: 8 

    • 1 1/2 teaspoons dried active baking yeast
    • 2 tablespoons warm water (45 C)
    • 250g (9 oz) plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 tablespoon caster sugar
    • 1/2 teaspoon salt
    • 3 eggs
    • 450ml (16 fl oz) buttermilk
    • 2 tablespoons vegetable oil

    1. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
    2. In a large bowl, mix together flour, baking powder, bicarbonate of soda, sugar and salt. Make a well in centre. Add yeast mixture, eggs, buttermilk and vegetable oil; stir until smooth.
    3. Pour batter onto hot waffle iron. Cook until golden brown, about 3 minutes. Serve hot.

    Used different ingredients. I replaced the buttermilk with ordinary milk, replaced 3 tablespoons of the milk with 3 tablespoons of lemon juice and left for 10 minutes.  -  13 Mar 2010


    Used different ingredients. Makes good waffles. I added some vanilla for more flavour. I like the make-ahead feature a lot - saves time in the morning when you need to put breakfast on the table in a hurry.  -  15 Sep 2008
