About this recipe:These cookies are incredibly quick and easy to make and taste fab! They are packed full of oats, have a light chocolately flavour and dotted with raisins.
Makes: 3 - 4 dozen
225g butter, softened
220g dark brown soft sugar
100g caster sugar
1 teaspoon vanilla extract
200g plain flour
30g unsweetened cocoa powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
250g porridge oats

Preheat oven to 180 C / Gas 4.
Beat butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, cocoa powder, bicarbonate of soda and salt; mix well. Stir in oats and raisins, mix well.
Drop heaped spoonfuls of the batter onto ungreased baking trays. Bake 10 to 12 minutes, until cookies are almost set. Do not overbake. Cool 1 minute on trays, then move to wire racks. Cool, then store tightly covered.
A nice oaty cookie with a subtle flavour from the brown sugar and cocoa. Seemed very easy to cook (sometimes its down to seconds if you over/under cook a cookie!). They kept a good shape and this recipe makes a big batch so I will actually be able to save some for tomorrow! - 07 May 2011
