Oat and Cocoa Cookies

    These cookies are incredibly quick and easy to make and taste fab! They are packed full of oats, have a light chocolately flavour and dotted with raisins.

    Makes: 3 - 4 dozen

    • 225g butter, softened
    • 220g dark brown soft sugar
    • 100g caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 200g plain flour
    • 30g unsweetened cocoa powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 250g porridge oats
    • 150g raisins

    1. Preheat oven to 180 C / Gas 4.
    2. Beat butter and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, cocoa powder, bicarbonate of soda and salt; mix well. Stir in oats and raisins, mix well.
    3. Drop heaped spoonfuls of the batter onto ungreased baking trays. Bake 10 to 12 minutes, until cookies are almost set. Do not overbake. Cool 1 minute on trays, then move to wire racks. Cool, then store tightly covered.

    A nice oaty cookie with a subtle flavour from the brown sugar and cocoa. Seemed very easy to cook (sometimes its down to seconds if you over/under cook a cookie!). They kept a good shape and this recipe makes a big batch so I will actually be able to save some for tomorrow!  -  07 May 2011

    While I did make a couple of changes, I'm sure that as is, these cookies are wonderful. First, I changed the recipe to make 24 cookies. Then I added about 2 T of softened/melted peanut butter as the last ingredient while omitting the raisins. I thought the batter was to die for, but then I tried a cookie. It was fluffy and moist on the inside. Perfect in my book! They remind me of my childhood fav- no bake cookies.
