    About this recipe: This is a wonderful cake that's perfect for those who have a sweet tooth. A cola-flavoured chocolate cake is spread with a rich cola and walnut topping. Enjoy with vanilla ice cream.

    Makes: 1 20x30cm cake

    • For the Cake
    • 400g caster sugar
    • 250g plain flour
    • 250ml cola-flavoured fizzy drink
    • 3 tablespoons unsweetened cocoa powder
    • 225g butter
    • 125ml buttermilk
    • 1 teaspoon bicarbonate of soda
    • 2 eggs
    • 75g mini marshmallows
    • For the Topping
    • 6 tablespoons cola-flavoured fizzy drink
    • 3 tablespoons unsweetened cocoa powder
    • 110g butter
    • 475g icing sugar
    • 115g chopped walnuts
    • 1 teaspoon vanilla extract

    1. Preheat oven to 180 C / Gas 4. Grease one 20x30cm baking tin.
    2. Sieve the flour, caster sugar and bicarbonate of soda together.
    3. In a saucepan over medium heat, bring 225g butter, 3 tablespoons cocoa and 250ml cola to the boil. Pour into the flour mixture and stir in the marshmallows, buttermilk and the beaten eggs. Pour the batter into the prepared tin.
    4. Bake at 180 C / Gas 4 for 30 to 35 minutes. Remove cake from oven and spread with topping while cake is still warm.
    5. For the Topping: In a saucepan, bring 110g butter, 6 tablespoons cola and 3 tablespoons cocoa to the boil. Remove from the heat and stir in the icing sugar, chopped nuts and vanilla. Spread topping over cake while still warm.
