    About this recipe: A delicious alcoholic drink, which is light, fresh and creamy. It's flavoured with limes, sweetened cream of coconut, rum and mint. It's the perfect summer drink that can be enjoyed all year long.

    Serves: 2 

    • 4 cupfuls ice cubes
    • 2 1/2 limes, rind removed
    • 200ml sweetened cream of coconut, such as Coco Lopez
    • 100ml white rum
    • 5 sprigs fresh mint leaves
    • 2 mint sprigs, for garnish
    • 2 lime wedges, for garnish

    1. Blend the ice, limes, cream of coconut, rum and mint leaves together in a liquidiser until smooth. Pour into two glasses and garnish each with a mint sprig and lime wedge as desired.

    Sweetened cream of coconut

    Can be purchased online. If unavailable, use coconut cream and icing sugar to taste.
