Coconut Energy Bars

    A simple, yet delicious energy bar, which is great for when you're on the go. They are packed with protein, fibre and flavour.

    Makes: 8 bars

    • 35g desiccated coconut
    • 110g butter
    • 3 tablespoons dark brown soft sugar
    • 1 egg
    • 3 tablespoons golden syrup
    • 3 tablespoons apple juice
    • 1/2 teaspoon vanilla extract
    • 60g wholemeal flour
    • 2 tablespoons vital wheat gluten
    • 160g porridge oats
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon ground cinnamon
    • 35g desiccated coconut
    • 80g linseed
    • 75g raisins
    • 50g roasted soya nuts

    1. Preheat oven to 180 C / Gas 4. Spray a 23cm square baking tin with oil. In a food processor, grind 35g desiccated coconut into a fine powder.
    2. In a large bowl, cream together butter and sugar. Mix in egg, golden syrup, apple juice and vanilla. Mix in coconut powder, wholemeal flour, gluten, oats, bicarbonate of soda and cinnamon. Stir in remaining coconut, linseed, raisins and soya nuts. Press evenly into the prepared tin.
    3. Bake for 20 minutes. Cool slightly, then cut into bars.


    Vital wheat gluten can be purchased in speciality baking stores or online.
    Roasted soya nuts can be found online.

    Delicious flavor but a bit dry. FYI I substituted 1/3 c molasses for syrup and concentrate, and used 1/4 c. gr. flax seed (instead of 1/2) and 3/4 c sliced almonds (instead of 1/2 soy nuts).  -  05 Jul 2005  (Review from Allrecipes US | Canada)
