200g caster sugar
220g dark brown soft sugar
1 teaspoon vanilla extract
250g plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
75g desiccated coconut
160g porridge oats
110g chopped pecans
2 (85g) packets jelly drops, such as Silver Spoon, chopped

Preheat oven to 190 C / Gas 5. Grease baking trays.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, bicarbonate of soda and salt; gradually stir into the creamed mixture. Stir in the coconut, oats, pecans and jelly drops. Roll the dough into walnut sized balls. Place the cookies 5cm apart onto the baking trays. Gently flatten cookies using a fork dipped in flour.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.
