Makes: 24 cookies
275g butter, softened
175g dark brown soft sugar
100g caster sugar
1 teaspoon vanilla extract
200g plain flour
1 teaspoon bicarbonate of soda
200g porridge oats
50g desiccated coconut
175g white chocolate chips

Preheat oven to 180 C / Gas 4.
In a medium bowl, cream together butter, dark brown soft sugar and caster sugar. Mix in the egg and vanilla. Combine flour and bicarbonate of soda; blend into creamed mixture. Stir in the oats, coconut and white chocolate chips. Drop heaped tablespoons onto ungreased baking trays.
Bake for 10 to 12 minutes in preheated oven or until lightly browned. Cool on wire racks.
really easy to make and super scrummy! I made these this evening and everyone who has had one loves them... I didn't included the vanilla essence as I had run out but they still taste lovely - 11 Apr 2012
easy to make, added extra choc and it would still need more white choc.
made another batch but used chocolate orange instead, now these were the wow batch and vanished quickly. have now got a list of friends wanting a batch. will be making a lot of these.... - 06 Nov 2013
