Italian Spaghetti Salad

    A simple, but delicious salad that's a cinch to make. Spaghetti, pepperoni, mushrooms, tomatoes, green olives and Parmesan cheese is tossed in an Italian salad dressing.

    Serves: 12 

    • 450g vermicelli or spaghetti pasta
    • 225ml Italian salad dressing
    • 4 tablespoons red wine vinegar
    • 1 small red onion, chopped
    • 225g pepperoni sausage, chopped

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a serving bowl.
    2. Pour the salad dressing and vinegar over the pasta and mix well. Add the onion, pepperoni, mushrooms, tomatoes, olives, seasoning mix and Parmesan cheese and stir until well combined. Serve at room temperature or cover and refrigerate for several hours or overnight.

    This recipe was excellent and very easy to make. I would recommend black olives instead of the green. Makes a large bowl, and believe me if there are any leftovers, it will get eaten!  -  21 Jul 2003  (Review from Allrecipes US | Canada)


    Although this is good, it's incredibly salty. Next time I'll substitute black olives and omit the dry dressing packet. I also omit onions, tomatoes and mushrooms (no one but me likes them), parm. cheese (can't do dairy) but add zucchini.  -  19 Jul 2007  (Review from Allrecipes US | Canada)
