    About this recipe: This is a quick and easy meal, which can be enjoyed anytime of the week. Macaroni is tossed with beef mince in a creamy sauce. Enjoy with crusty bread rolls, if desired.

    Ingredients
    Serves: 8 

    • 450g macaroni
    • 450g minced beef
    • 225g cream cheese, softened
    • 2 (295g) tins condensed cream of mushroom soup
    • 250ml milk or as needed

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni and return to the boil. Cook the pasta uncovered, stirring occasionally, until the pasta is tender and has cooked through, about 10 minutes. Drain well in a colander set in the sink.
    2. Meanwhile, cook the minced beef in a frying pan over medium heat, breaking the meat up as it cooks, until the beef is browned and no longer pink. Drain excess fat. Stir in the cream cheese until melted, then mix in the mushroom soup until thoroughly combined. Stir in milk, about 4 tablespoons at a time, until the mixture is the consistency of gravy. Stir in the macaroni, bring to a simmer and serve.

    I make a variation of this all of the time! I do, however, do a few things different: - I use about a cup of milk, instead of cream cheese - I add at least 2 cups of sliced fresh mushrooms (cooked with the ground beef) - I use plenty of seasonings while cooking the beef ( garlic powder, seasoning salt, a little rosemary, black pepper - all to taste) - and I use several different types of pasta. Sometimes I use spaghetti, sometimes penne, scoobidoos, rotini, etc - depending on what we feel like. They are all wonderful.
