A great way of making use of courgettes when in-season. They are grated, mixed with breadcrumbs, onions and seasonings, then pan-fried to perfection. Serve as a starter or main course with your favourite dip.
Can be purchased online if your local supermarket doesn't stock it.

I have used this now many times, love it, still cant make burgers thou but i roll them into balls and deep fry. I put cumin and coriander into mix to make them go fab with currys. i now cut courgettes into two, salt them and leave overnight, then grate and leave to drip even more otherwise i find mixture is far too wet ( maybe as i use fresh from garden). had a party with veggie curry and served these and everybody loved them. - 19 Sep 2013
