Chocolate pizza cookie

    A fun and excellent way of making cookies. These giant 25cm cookies are topped with chocolate chips, walnuts, M&Ms and peanuts. Cut into wedges and enjoy with a mug of tea.

    Makes: 2 (25cm) cookie pizzas

    • 200g plain flour
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 190g porridge oats
    • 225g butter
    • 325g dark brown soft sugar
    • 2 eggs
    • 1/2 teaspoon vanilla extract
    • 110g desiccated coconut
    • 340g plain chocolate chips
    • 60g chopped walnuts
    • 210g chocolate M&Ms or smarties
    • 150g peanuts

    1. Combine flour, bicarbonate of soda, salt and oats. Stir well to blend. Cream butter, dark brown soft sugar, eggs and vanilla together thoroughly. Add flour mixture to creamed mixture. Mix well.
    2. Stir in 1/3 of the coconut and chopped nuts. Spread dough evenly in 2 greased 26cm pizza pans or press into 26cm circles on greased baking trays.
    3. Bake at 180 C / Gas 4 for 10 minutes. Remove from oven.
    4. Sprinkle with chocolate, remaining coconut, M&Ms and peanuts. Bake for 5-10 minutes longer or until golden brown. Cool in pans/trays on wire racks. Cut cooled cookie pizza into wedges.

    We made the cookies and they spread so much that they overflowed the pan! I baked them for exactly 10 minutes and they were overdone on the outside and underdone in the middle. We probably won't make this one again. The recipe called for only 1/2 teaspoon of vanilla, I would recommend using 1 teaspoon.  -  04 Jan 2001  (Review from Allrecipes US | Canada)
