About this recipe: Be transported to Capri with this classic Insalata Caprese. Proof that sometimes the simplest things in life are the best.


Serves: 4 

  • 4 large tomatoes
  • 4 tablespoons extra virgin olive oil
  • freshly ground black pepper to taste
  • 275g (10 oz) mozzarella cheese, thickly sliced
  • 8 to 10 leaves fresh basil, torn into strips

  1. Chop tomatoes in half, then slice thinly; arrange on four plates. Drizzle a tablespoon of olive oil over each serving, and sprinkle with black pepper. Lay slices of cheese over tomatoes, and strips of basil over cheese.

You simply *MUST* use FRESH mozzarella cheese to fully appreciate this recipe. I can't even imagine it with the bland, hard stuff you find in the dairy shelf at supermarkets. Fresh mozzarella is a bit difficult to find but it's worth the effort. Try specialty shops. I like to slice fresh tomatoes, sprinkle with sea salt, add torn pieces of fresh basil, then the mozzarella. Drizzle all with a good quality extra virgin olive oil combined with a splash of balsamic vinegar. - 24 Jul 2008


This was lush! I didn't put basil leaves on it is I didn't have any. I sprinkled some dried basil for taste but it was still gorgeous. Great recipe - 09 Aug 2012
