About this recipe: An easy bread, which requires very little prep. Simply add all the ingredients to the bread maker and let it do its magic. Enjoy with lashings of butter.

Makes: 1 loaf

  • 180ml warm water (45 degrees C)
  • 225g cottage cheese, room temperature
  • 2 tablespoons vegetable oil
  • 1 egg
  • 375g plain flour
  • 2 tablespoons caster sugar
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1 3/4 teaspoons dried active baking yeast

  1. Add the ingredients to the pan of a bread machine in the order suggested by the manufacturer. Press "start". Add more flour if the dough appears too sticky.

Lovely crust and really light and fluffy. I have a Panasonic sd-2500 and used the wholemeal rapid bake setting as that is a 3 hour setting. I added the ingredients in line with the the general guidelines in my manual (yeast and bicarb, flour, sugar, salt then wet ingredients with water last) and then a bit more flour as the recipe suggested as my dough felt a bit sticky. I put a tad less salt and sugar in and used coconut oil for the oil part (gives a slight coconut taste if you don't mind that) and also for half of the flour, used strong white bread flour. I will definitely make this again as it is higher in protein with the egg and cottage cheese - 31 Jul 2015
