Cottage Cheese and Cabbage Pasta

    A delectable vegetarian pasta, which is simple to make. Sauteed cabbage is tossed with spaghetti and cottage cheese.

    Ingredients
    Serves: 4 

    • 175g margarine, divided
    • 1 medium head cabbage, cored and thinly sliced
    • 1 onion, sliced
    • 450g uncooked spaghetti
    • 225g cottage cheese
    • 1 tablespoon caster sugar
    • salt and pepper to taste

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. In a large frying pan over medium-low heat, melt 30g margarine. Add cabbage and onions. Cover and cook, stirring occasionally, until tender and browned.
    2. Meanwhile, bring a large pot of lightly salted water to the boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    3. Stir cooked pasta into cabbage and add remaining margarine. Stir in cottage cheese and sugar; cook until heated through.
    4. Season with salt and pepper to taste.

    This recipes is delicious. I made minor modifications -- cooked the cabbage and onions till very soft, used 2 cups cottage cheese, and added 1 lb. sliced, browned, & drained turkey kielbasa.     When I make this I use the bow tie pasta.It is a bit firmer and stands well with the cabbage.Also does not sog down when reheated. Hope this helps!  -  20 Jan 2002  (Review from Allrecipes US | Canada)
