    About this recipe: A wonderful fritter that is perfect as an appetiser or part of a main course. Courgettes, razor clams, breadcrumbs, eggs and seasonings are dropped into oil and fried to perfection. Why not make the fritters smaller for party nibbles and serve with your favourite dip.

    Makes: 12 fritters

    • 4 eggs
    • 250ml milk
    • 185g diced courgette
    • 225g chopped razor clams
    • 1 small onion, diced
    • 1 clove garlic, finely chopped
    • 55g breadcrumbs
    • 60g plain flour
    • 2 tablespoons chopped fresh parsley
    • salt and black pepper to taste
    • 250ml oil for frying
    • 30g butter

    1. Beat together the eggs and milk in a bowl until evenly blended. Mix in the courgette, razor clams, onion and garlic; set aside. Stir together the breadcrumbs, flour, parsley, salt and pepper in a separate large bowl. Pour the egg and vegetable mixture into the flour mixture and stir until well combined.
    2. Heat oil and butter in a large, deep frying pan over medium-high heat. Drop fritter batter by spoonfuls into the frying pan in batches of 4. Cook until golden brown on the bottom; flip and cook until the other side is golden brown. Drain the fritters on a kitchen towel-lined plate.
