Courgette and Clam Fritters

    A wonderful fritter that is perfect as an appetiser or part of a main course. Courgettes, razor clams, breadcrumbs, eggs and seasonings are dropped into oil and fried to perfection. Why not make the fritters smaller for party nibbles and serve with your favourite dip.

    Ingredients
    Makes: 12 fritters

    • 4 eggs
    • 250ml milk
    • 185g diced courgette
    • 225g chopped razor clams
    • 1 small onion, diced
    • 1 clove garlic, finely chopped
    • 55g breadcrumbs
    • 60g plain flour
    • 2 tablespoons chopped fresh parsley
    • salt and black pepper to taste
    • 250ml oil for frying
    • 30g butter

    Method

    1. Beat together the eggs and milk in a bowl until evenly blended. Mix in the courgette, razor clams, onion and garlic; set aside. Stir together the breadcrumbs, flour, parsley, salt and pepper in a separate large bowl. Pour the egg and vegetable mixture into the flour mixture and stir until well combined.
    2. Heat oil and butter in a large, deep frying pan over medium-high heat. Drop fritter batter by spoonfuls into the frying pan in batches of 4. Cook until golden brown on the bottom; flip and cook until the other side is golden brown. Drain the fritters on a kitchen towel-lined plate.

    Wow, this was amazing. Combining zucchini with clams a great tasty idea. I did adjust the recipe because I didn't have some of the ingredients on hand. I used only 3 eggs and used scallions instead of onions. Also, my zucchini was shredded not diced because I had extra shredded zucchini from zucchini bread I was baking. And I used half a cup of clam juice with half a cup of milk. Sorry, I know these changes might affect the results so I plan to make this exactly next time. I just had to say thank you for a great recipe. UPDATE: yep, made it again this week and this time followed the recipe to a "T" (well, almost, I still had to use shredded zucchini because husband hates zucchini so I have to make it as invincible as possible) but boy, was it good.     Living as far inland as I do, razor clams aren't something I've ever seen. I used canned clams, drained, instead. I felt these needed a little extra seasoning. I may try these again with my homemade seasoned bread crumbs and some extra garlic. My batter was extremely thin, so I did add extra bread crumbs and flour (and salt and pepper) to make them more of a drop consistency.
