Courgette Cake Slices

    This cake traybake is similar to carrot cake, but with courgettes. They are topped with a delicious cream cheese icing. Enjoy as a snack or for afternoon tea.

    Makes: 1 20x30cm tin

    • 3 eggs
    • 250ml vegetable oil
    • 400g caster sugar
    • 2 teaspoons vanilla extract
    • 300g plain flour
    • 1/4 teaspoon baking powder
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 250g grated courgette
    • 110g margarine
    • 85g cream cheese
    • 300g icing sugar

    1. Preheat oven to 180 C / Gas 4. Grease a 20x30cm baking tin.
    2. In a large bowl, mix together the eggs, oil, sugar and vanilla until well blended. Combine the flour, baking powder, bicarbonate of soda and salt; stir into the sugar mixture. Mix in the courgette. Spread the batter evenly into the prepared tin.
    3. Bake for 20 to 25 minutes in the preheated oven, until a skewer inserted into the centre comes out clean. Allow cake to cool completely.
    4. Meanwhile, make the icing. Blend the margarine, cream cheese and icing sugar together until well blended. Spread over cooled cake before cutting into slices.


    Place the grated courgette in a clean tea towel and wring it out. This technique will remove much of the water in the courgette promoting a more even cook.

    Think there must be a misprint! Followed recipe, but after 25 minutes the cake was nowhere near cooked, so put it back for another 25 minutes. It was STILL not cooked. Think there should be either 4oz or 125 grams sugar and NOT 400grams. Absolute disaster!!!  -  09 Sep 2014


    Wonderful recipe. I read about the concerns of too much oil. I added 1/3c of oil and 2/3c apple sauce. I also added some nutmeg and cinnamon.  -  03 Oct 2008  (Review from Allrecipes US | Canada)


    I have not tried this recipe yet, but I will say that if your bread/bars are not cooking up right, you really HAVE TO squeeze all the liquid out of the shredded zucchini BEFORE you measure it.
