About this recipe: This cake traybake is similar to carrot cake, but with courgettes. They are topped with a delicious cream cheese icing. Enjoy as a snack or for afternoon tea.
Place the grated courgette in a clean tea towel and wring it out. This technique will remove much of the water in the courgette promoting a more even cook.
Think there must be a misprint! Followed recipe, but after 25 minutes the cake was nowhere near cooked, so put it back for another 25 minutes. It was STILL not cooked. Think there should be either 4oz or 125 grams sugar and NOT 400grams. Absolute disaster!!! - 09 Sep 2014

I have not tried this recipe yet, but I will say that if your bread/bars are not cooking up right, you really HAVE TO squeeze all the liquid out of the shredded zucchini BEFORE you measure it. That is imperative!!! Zucchini is a very watery vegetable and that may be the problem. - 03 Aug 2007 (Review from Allrecipes US | Canada)
