About this recipe: A super-tasting quick bread, which is perfect for teatime. This moist cake is easy to make, lightly spiced with cinnamon and dotted with walnuts.

Makes: 4 loaves

  • 375g plain flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 teaspoons bicarbonate of soda
  • 2 teaspoons ground cinnamon
  • 400g caster sugar
  • 250ml vegetable oil
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 60g chopped walnuts
  • 225g grated courgette

Prep:20min  ›  Cook:1hr  ›  Ready in:1hr20min 

  1. Preheat oven to 180 C / Gas 4. Grease and flour 4 loaf tins.
  2. In a medium bowl, mix together flour, salt, baking powder, bicarbonate of soda and cinnamon. Set aside.
  3. In a large bowl, combine sugar, oil, eggs and vanilla. Beat until smooth. Add flour mixture and beat until smooth. Fold in walnuts and courgette.
  4. Divide batter into prepared tins. Bake at 180 C / Gas 4 for 60 minutes or until skewer inserted into middle of cake comes out clean.
