Classic cowboy cookies

    These scrumptious cookies will be loved by everyone. They are chewy, buttery, oaty and packed full of chocolate chips. Enjoy as a snack or with a cuppa.

    Makes: 60 cookies

    • 250g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 225g butter, softened
    • 200g caster sugar
    • 220g dark brown soft sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 160g porridge oats
    • 170g plain chocolate chips

    1. Preheat oven to 180 C / Gas 4. Grease baking trays. Sieve together the flour, baking powder, bicarbonate of soda and salt. Set aside.
    2. In a large bowl, cream together the butter, caster sugar and dark brown soft sugar until light and fluffy. Beat in eggs one at a time, then stir in the vanilla. Gradually stir in the sieved ingredients. Stir in the oats and chocolate chips. Drop heaped teaspoons of the batter onto the prepared trays.
    3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking trays for 5 minutes before removing.

    Turned out flat, huge and greasy and tasted awful. Ended up throwing the whole lot away. I tried another recipe on here and they turned out luvverly!  -  15 May 2013


    These are lovely!! I halved the recipe and still got 40 cookies, although mine look a bit smaller than those in the pic? Really nice, chocolately chewy cookies.  -  27 Feb 2012
