About this recipe:A delicious way to prepare fish. Sea bass fillets are topped with a cheesy crab and pepper crumb. The topping also works well for stuffed mushrooms.
1 1/2 tablespoons breadcrumbs
1/2 tablespoon grated Parmesan cheese
2 tablespoons chopped red pepper
2 tablespoons chopped yellow pepper
2 spring onions, chopped
1/4 jalapeno chilli, seeded and finely chopped
60g butter, melted
1 (170g) tin crab meat, drained and flaked
2 tablespoons grated mozzarella cheese
4 (175g) fillets sea bass fish

Preheat oven to 190 C / Gas 5.
In a medium bowl, stir together the breadcrumbs, Parmesan, red pepper, yellow pepper, spring onions, chilli, butter, crab meat and mozzarella cheese. Arrange fish in a single layer in a 20x30cm baking dish. Spread the crumb topping evenly over the fish.
Bake for 30 minutes in the preheated oven or until fish is easily flaked with a fork. If you have thin fillets, you may grill for 10 minutes instead of baking.
Can be found in speciality markets or online. Alternatively, use any fresh chilli to taste.
