About this recipe: Moreish cookies with the irresistible winter flavours of dried cranberries, cinnamon and orange zest.

  • 225g butter, softened
  • 220g dark brown soft sugar
  • 100g caster sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon grated orange zest
  • 1 teaspoon orange extract
  • 200g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 250g porridge oats
  • 120g dried cranberries

  1. Preheat oven to 180 C / Gas 4.
  2. In a large bowl, cream together the butter, dark brown soft sugar and caster sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla, orange zest and orange extract. Combine the flour, bicarbonate of soda and cinnamon; stir into the butter mixture. Stir in the oats and cranberries. Drop heaped tablespoons of the batter onto ungreased baking trays.
  3. Bake for 10 to 12 minutes in the preheated oven or until golden brown. Allow cookies to cool on baking tray for 2 minutes before removing to a wire rack to cool completely.
