Creamy crayfish linguine

    A quick and easy pasta dish that is absolutely fabulous. Linguine is topped with a creamy crayish and mushroom sauce. Serve with garlic bread and salad, if desired.

    Serves: 4 

    • 225g linguine pasta
    • 110g butter
    • 4 tablespoons olive oil
    • 1 clove garlic, crushed
    • 75g sliced mushrooms
    • 450g crayfish tails
    • 50g chopped spring onions
    • 250ml single cream
    • 35g grated Parmesan cheese
    • 4 tablespoons chopped fresh parsley
    • salt and pepper to taste

    1. Bring a large pot of lightly salted water to the boil. Cook pasta for 8 to 10 minutes or until al dente; drain.
    2. Meanwhile, melt butter with olive oil in a large frying pan over medium heat. Saute garlic and mushrooms until tender. Stir in crayfish and spring onions; reduce heat to low and cook 5 minutes.
    3. Stir in cream, Parmesan cheese and parsley. Simmer for 5 minutes. Season with salt and pepper and serve over hot linguine.

    This was easy and delicious. My only suggestion is that since it is very fattening that you cut back on the amount of butter, oil, and half and half that the recipe calls for. I will definately fix this again.  -  13 Aug 2001  (Review from Allrecipes US | Canada)
