    About this recipe: A quick and easy pasta dish that is absolutely fabulous. Linguine is topped with a creamy crayish and mushroom sauce. Serve with garlic bread and salad, if desired.

    Serves: 4 

    • 225g linguine pasta
    • 110g butter
    • 4 tablespoons olive oil
    • 1 clove garlic, crushed
    • 75g sliced mushrooms
    • 450g crayfish tails
    • 50g chopped spring onions
    • 250ml single cream
    • 35g grated Parmesan cheese
    • 4 tablespoons chopped fresh parsley
    • salt and pepper to taste

    1. Bring a large pot of lightly salted water to the boil. Cook pasta for 8 to 10 minutes or until al dente; drain.
    2. Meanwhile, melt butter with olive oil in a large frying pan over medium heat. Saute garlic and mushrooms until tender. Stir in crayfish and spring onions; reduce heat to low and cook 5 minutes.
    3. Stir in cream, Parmesan cheese and parsley. Simmer for 5 minutes. Season with salt and pepper and serve over hot linguine.
