    About this recipe: This is a great snack for those who have a sweet tooth. They are a hybrid between a biscuit and a cake. A chewy biscuit base is topped with a sweetened cream cheese mixture. Enjoy with a mug of tea or coffee.

    Makes: 24 squares

    • 520g sponge cake mix
    • 110g butter, melted
    • 1 egg, beaten
    • 225g cream cheese, softened
    • 2 eggs, beaten
    • 420g icing sugar

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 25x38cm swiss roll tin.
    2. Mix together cake mix, butter and 1 egg. Press mixture into tin.
    3. In a small bowl, mix together cream cheese, 2 eggs and icing sugar. Pour mixture on top of cake base.
    4. Bake for 15 minutes. Reduce temperature to 150 C / Gas 2 and bake for 30 to 35 minutes. Cool and cut into squares.
