Chocolate and almond cake bars

    These bars are a little like brownies, only they're lighter and more cake-like. They are moist and incredibly delicious. Enjoy as a snack, for afternoon or for dessert.

    Makes: 18 bars

    • 60g plain flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 55g plain chocolate chips
    • 65g margarine
    • 200g caster sugar
    • 3 eggs
    • 45g cream cheese
    • 2 teaspoons vanilla extract
    • 1/2 teaspoon almond extract
    • 55g chopped almonds

    1. Preheat oven to 180 C / Gas 4. Grease 23cm square baking tin.
    2. In top of a double boiler, melt chocolate chips and margarine, stirring frequently until smooth. Pour into a large bowl and mix in sugar, cream cheese and eggs. Stir in vanilla and almond extracts. Gradually mix in flour, baking powder and salt. Fold in almonds and pour the batter into tin.
    3. Bake for 35 to 40 minutes in the preheated oven, until skewer inserted near the centre comes out clean. Let cool in pan before cutting into bars.
