    About this recipe: This icing is a little different than the average buttercream. Milk is thickened with flour, then beaten with butter, sugar and vanilla. It looks and acts like whipped cream.

    Makes: 700 g approximately

    • 250ml milk
    • 2 tablespoons plain flour
    • 225g butter, softened
    • 200g caster sugar
    • 1 teaspoon vanilla extract

    1. Whisk milk into flour in small saucepan until smooth. Heat and stir until it boils and thickens. Cool thoroughly.
    2. Cream butter, sugar and vanilla in bowl until light and fluffy. Add thickened milk. Beat until mixture resembles whipped cream. Makes enough to fill and ice a two layer cake.
