    About this recipe: A great soup for the winter, which is simple to make and very hearty. It's creamy and packed full of ham, green beans and potatoes. Enjoy with fresh crusty bread.

    Ingredients
    Serves: 8 

    • 2 litres water
    • 900g fully-cooked ham, chopped
    • 440g fresh green beans, trimmed and cut into 1.75cm pieces
    • 465g cubed potatoes
    • 2 onions, sliced
    • 250ml cream
    • 1 teaspoon salt or to taste
    • 1/4 teaspoon ground black pepper or to taste

    Method
    Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

    1. Place the water, ham, green beans, potatoes and onions into a large saucepan. Bring to the boil and reduce heat to medium-low. Simmer until the ham and vegetables are very tender, about 45 minutes. Skim off any excess fat. Pour in the cream, season to taste with salt and pepper. Serve.

    This is a fabulous dish that lasts quite a while. It maintains its flavour even while sitting in the fridge. I substituted the cream for zero fat greek yogurt for a healthier twist. I would even suggest that if you are watching your intake that you could comfortably reduce the amount of potatoes. I also used gammon shank rather then ham only because it was on hand.
