Minty Chocolate Cake Bars

    The wonderful flavour combinations of mint and chocolate are brought together in these bars. Chocolate cake is topped with a creme de menthe icing, then a layer of dark chocolate.

    Ingredients
    Makes: 24 bars

    • 200g caster sugar
    • 225g butter, softened
    • 4 eggs
    • 125g plain flour
    • 1/2 teaspoon salt
    • 450g chocolate syrup
    • 1 tablespoon vanilla extract
    • 240g icing sugar
    • 110g butter, softened
    • 4 tablespoons creme de menthe liqueur
    • 170g plain chocolate chips
    • 90g butter

    Method
    Prep:30min  ›  Cook:30min  ›  Extra time:4hr cooling  ›  Ready in:5hr 

    1. Preheat oven to 180 C / Gas 4. Grease one 20x30cm baking dish.
    2. Beat the caster sugar with 225g butter until light and fluffy. Beat in the eggs. Then stir in the flour, salt, chocolate syrup and vanilla. Mix until combined.
    3. Pour batter into the prepared tin and bake in preheated oven for 30 minutes. Let cool.
    4. Meanwhile, combine the icing sugar, 110g butter and creme de menthe. Mix until smooth. Spread over cooled cake. Chill until set.
    5. Melt the chocolate chips and remaining butter together. Stir until smooth and spread evenly over the top of the cooled filling. Let set and cut into bars.

    AWESOME! The first time I made these at Christmas I did it from scratch, but the next time instead of all the effort, I baked a batch of boxed brownies, and still did the topping the same.     I followed the suggestion of another reviewer and used a box mix of brownies (double chocolate) and made the icing and chocolate topping per the instructions. WOW! This is an amazing dessert- it's moist, decadent, and slices really easily for a pretty presentation. My creme de menthe liqueur was clear, so I added a few drops of green food coloring to make it festive. I will be making this again and again, and then again some more!
