About this recipe: A great no-bake recipe that the kids can get involved in making. A layer of vanilla ice cream is sandwiched between two layers of sweetened Rice Krispies.


Serves: 12 

  • 40g crispy rice cereal, such as Rice Krispies
  • 4 tablespoons dark brown soft sugar
  • 75g sweetened dessicated coconut
  • 60g chopped mixed nuts
  • 50g margarine, melted
  • 1 (1 litre) block vanilla ice cream
  • 450g strawberries, sliced to serve

Prep:15min  ›  Extra time:15min freezing  ›  Ready in:30min 

  1. Grease a 20x30cm baking dish.
  2. In a medium bowl, stir together the crispy rice cereal, dark brown soft sugar, coconut, mixed nuts and margarine. Place half of the crisp rice mixture in the bottom of the prepared baking dish.
  3. Cut the block of ice cream into1.75cm slices and arrange in baking dish, covering all of the crisp rice mixture. Sprinkle remaining crisp rice mixture over the top of the ice cream and gently press.
  4. Place baking dish in the freezer 15 minutes or until set. Keep frozen until ready to serve. (Bars can be kept covered, in the freezer for 2 weeks.) Cut into squares and serve with strawberries.
