    About this recipe: An incredibly simple, yet utterly delicious cake. A moist sponge cake is topped with a buttery crumble. Enjoy as is, with cream, whipped cream, custard or ice cream.

    Makes: 1 28x18cm cake

    • 200g plain flour
    • 200g caster sugar
    • 110g butter, softened
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1 teaspoon bicarbonate of soda
    • 1 pinch salt
    • 1 egg, lightly beaten
    • 250ml buttermilk

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 28x18cm or similar sized tin.
    2. In a large bowl, mix flour and sugar together. Cut in the butter until the mixture resembles coarse crumbs. Reserve 8 tablespoons of this mixture for the crumble topping.
    3. To the remaining flour mixture, stir in the cinnamon, cloves, bicarbonate of soda and salt. Blend in egg and buttermilk. Pour batter into prepared tin. Sprinkle over reserved crumble topping.
    4. Bake in the preheated oven for 25 to 30 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
