Cucumber on Rye Canapes

    It takes just four ingredients to make these wonderful canapes. Rye bread is topped with mayonnaise, cucumber and lemon pepper. Simple and delicious.

    Serves: 45 

    • 450g German rye bread, cut into 4x4cm squares
    • 125ml mayonnaise
    • 2 cucumbers, thinly sliced
    • 1 teaspoon lemon pepper

    1. Spread each piece of bread with mayonnaise. Place 2 or 3 slices of cucumber on each. Sprinkle with lemon pepper.

    Have done this recipe for years, and it *IS* a good one! My make ahead of time, the night before; I very lightly butter the bread slices first, use miracle whip, NOT mayo. and I use seasoning salt instead of lemon pepper.     Quick, easy, light appetizers. We enjoyed the lemon pepper and cucumber combination. I'd recommend leaving the bread out to soften if you purchase the refrigerated cocktail bread. We used light mayo to make the sandwiches even lighter.
