Creamy Fish Curry

    This is a wonderful fish supper, which is easy to make. Cod is simmered in a creamy curry sauce. Enjoy over freshly cooked white rice and steamed broccoli.

    Serves: 2 

    • 2 tablespoons soya oil
    • 1 medium onion, finely chopped
    • 2 spring onions, finely chopped
    • 1 fresh red chilli, finely chopped
    • 1 1/2 tablespoons chopped roasted red peppers
    • 2 tablespoons curry powder
    • 475ml single cream
    • 340g cod fillets, cut into 2.5cm cubes
    • garlic granules to taste
    • salt and pepper to taste

    1. Heat oil in a medium saucepan over medium heat. Stir in onion, spring onions, red chilli and red peppers. Cook and stir until onions are tender, about 5 minutes. Mix in curry powder and continue to cook and stir 2 to 5 minutes.
    2. Blend cream into the onion mixture and simmer until thickened. Mix in cod, cooking 3 to 5 minutes, until easily flaked with a fork. Season with garlic granules, salt and pepper.

    Alternatives to cod:

    Try this recipe with inexpensive fresh coley or pouting. They both belong to the cod family but are much cheaper and available in larger supermarkets or fishmongers.
