Cottage Cheese Kolache

    This is a fantastic Czech pastry, which is a little time consuming, but oh-so-worth it! A sweetened yeast dough is filled with a mixture of cottage cheese and raisins, then baked to perfection.

    Makes: 48 

    • 125ml warm water
    • 2 (7g) sachets dried active baking yeast
    • 250ml warm milk (45 degrees C)
    • 100g caster sugar
    • 1 teaspoon salt
    • 100g melted margarine
    • 250g sifted plain flour
    • 2 eggs
    • 440g plain flour
    • 2 egg yolks
    • 3 tablespoons caster sugar
    • 1/8 teaspoon salt
    • 2 tablespoons plain flour
    • 150g raisins
    • 450g cottage cheese

    1. Pour yeast into 125ml lukewarm water. Set aside to soak.
    2. In a separate bowl mix together 250ml milk, 100g sugar, 1 teaspoon salt. Add 100g melted margarine and 250g sifted flour. Beat well. Add in 2 beaten eggs and yeast mixture and mix well. Set aside to rest until bubbly and spongy.
    3. Add 440g flour and blend well. Set aside to rise for 1 hour. Punch down and let rise again for 1 hour.
    4. For the filling, beat together 2 egg yolks, 3 tablespoons sugar, 1/8 teaspoon salt, 2 tablespoons flour and 150g raisins. Add cottage cheese and mix well.
    5. Pinch off 2.5cm balls from dough and press an indentation in the centre of each. Put filling in. Let rise 15 minutes, then bake at 220 C / Gas 7 until golden, 12 to 18 minutes.

    Its very rare that I give something 5 stars, but this one deserves it.
