Beef and cheese wrap

    This is great alternative to the classic sandwich. A flour tortilla is filled with roast beef, melted Cheddar cheese, lettuce, tomato, onion, olives and Italian dressing.

    Serves: 1 

    • 1 flour tortilla
    • 4 slices roast beef
    • 50g grated Cheddar cheese
    • 30g finely chopped lettuce
    • 90g chopped tomato
    • 4 tablespoons chopped onion
    • 4 black olives
    • 2 tablespoons Italian-style salad dressing

    1. Place tortilla on a plate. Cover tortilla with roast beef, then cheese. Microwave for 45 seconds or until cheese is melted. Sprinkle with lettuce, tomato, onion and olives. Top with 3 or 4 splashes Italian dressing. Roll up.

    Used mayo mixed with carmalised onions and 1/4 tsp mustard, spread on wraps first, then topped with grated cheese. Melted under grill added salad leaves, tomato& pepper. It was yum. Thanks for idea.  -  01 Apr 2014


    I doubled this recipe to make two wraps. One kid asked for no olives, so I omitted them from one wrap. I was concerned using the italian-style dressing only because I didn't want it to leak out of the tortilla as my kids were eating them. I solved that by mixing it with two tablespoons of reduced fat mayonnaise, then dividing it between the two tortillas.     These are good for a regular lunch...nothing out of the ordinary. I don't like the Italian dressing on it...way too overpowering, so I use some sour cream or ranch or omit.
