Brown Sugar Walnut Fudge

    This fudge is simple to make and oh-so-good. They make perfect food gifts and are excellent for when you have a sugar-craving. Store them somewhere safe, otherwise they'll be gone before you know it!

    Makes: 1 20 or 23cm square tin

    • 450g dark brown soft sugar
    • 175ml evaporated milk
    • 30g butter
    • 1 teaspoon vanilla extract
    • 55g chopped walnuts

    1. Butter a 20 or 30cm square tin.
    2. In a large heavy saucepan, stir together the dark brown soft sugar and evaporated milk. Bring to the boil over medium-high heat. Cook until the temperature reaches between 112 to 116 degrees C or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
    3. Remove from the heat and stir in the butter, vanilla and walnuts. Continue to beat with a sturdy spoon until the mixture looses its gloss. Pour into the prepared tin. Score into squares with a knife then set aside until firm, about 5 minutes. Cut into squares and serve or store in an airtight container in the refrigerator.

    Great recipe! Turned out perfect. The reason another users came out runny was because it was not heated to the proper temp. Sugar is a very tricky substance to work with so temp. is very important.     I have been looking for this type of recipe for years! I really don't like the "soft" fudge at all and all the recipes I have tried seem to produce that texture.
