    These muffins are the perfect treat anytime of the day. Golden syrup oat muffins are topped with a cinnamon-spiced butter crumble.

    Ingredients
    Makes: 12 muffins

    • Crumble Topping
    • 3 tablespoons plain flour
    • 3 tablespoons dark brown soft sugar
    • 1/4 teaspoon ground cinnamon
    • 30g butter
    • Muffins
    • 225g plain flour
    • 5 tablespoons caster sugar
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 85g instant oats with golden syrup
    • 1 egg, beaten
    • 250ml milk
    • 4 tablespoons vegetable oil

    Method
    Prep:20min  ›  Cook:15min  ›  Ready in:35min 

    1. Preheat oven to 200 C / Gas 6. Grease a 12-hole muffin tin.
    2. Combine 3 tablespoons flour, dark brown soft sugar and cinnamon in a small bowl. Use two knives to cut in the butter until the mixture resembles coarse crumbs. Reserve.
    3. Combine 225g flour, caster sugar, baking powder, salt and the instant oats in a large bowl. Make a well in the centre of the flour mixture; pour in the egg, milk and oil. Stir just until moistened. Spoon batter into prepared muffin tin, filling each 2/3 full. Evenly sprinkle streusel topping over muffins.
    4. Bake in preheated oven until skewer inserted in centre of muffin comes out clean, about 15 minutes. Cool on wire rack for 5 minutes before serving.

    I gave this 4 stars just because i changed the recipe a little....the first time i made these they were super dense and not very sweet but still good...the second time i added nother egg, extra sugar and vanilla and they were excellent  -  29 Jun 2010  (Review from Allrecipes US | Canada)

    I added a half tsp. of maple flavoring and half tsp. of vanilla. I also used lowfat buttermilk. These baked up nicely but my kids found them a bit dry. Maybe another egg? They smell divine.     This was a very mouthwatering recipe and it smelled delightful while baking in the oven. Instead of veg. oil I used half a stick of butter. I also baked it as a cake because I didn't have muffin tins but it came out great.
