    About this recipe: This cake is deliciously rich, easy to make and tastes fabulous. A dark chocolate cake is topped with a cream cheese icing with walnuts and chocolate chips.

    Makes: 1 20x30cm cake

    • 375g plain flour
    • 400g caster sugar
    • 45g unsweetened cocoa powder
    • 2 teaspoons bicarbonate of soda
    • 1/2 teaspoon salt
    • 475ml hot water
    • 1 tablespoon instant coffee powder
    • 150ml vegetable oil
    • 2 tablespoons white vinegar
    • 2 teaspoons vanilla extract
    • 2 eggs
    • 4 tablespoons caster sugar
    • 225g cream cheese
    • 4 tablespoons caster sugar
    • 1/2 teaspoon vanilla extract
    • 1 egg
    • 170g plain chocolate chips
    • 120g finely chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm baking tin.
    2. In a large bowl, stir together the flour, sugar, cocoa, bicarbonate of soda and salt. Combine the hot water and instant coffee, then add to the dry ingredients along with the oil, vinegar, vanilla and eggs. Mix until smooth and well blended. Spread batter evenly into the prepared tin. Sprinkle with the 4 tablespoons sugar.
    3. Bake for 45 to 60 minutes in the preheated oven, until a skewer inserted comes out clean.
    4. Make the topping while the cake is cooling. In a medium-size mixing bowl, beat together the cream cheese, sugar, vanilla and egg until smooth. Stir in the chocolate chips and walnuts. Spread over cooled cake.
