Date Bars

    A wonderful treat anytime of the day. Sweet and squidgy dates are sandwiched between buttery oat and walnut layers. They are easy to make and everyone will love them.

    Makes: 1 20x30cm tin

    • 450g dates, pitted and chopped
    • 200g caster sugar
    • 125ml water
    • 1 teaspoon grated lemon zest
    • 2 teaspoons grated orange zest
    • 120g porridge oats
    • 225g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 220g dark brown soft sugar
    • 1 teaspoon ground cinnamon
    • 115g chopped walnuts
    • 225g butter, melted
    • 40g icing sugar for dusting

    1. In a medium saucepan bring the dates, sugar, water, lemon zest and orange zest to the boil. Boil for 3 minutes, stirring constantly, then remove from the heat and set aside to cool.
    2. Preheat the oven to 170 C / Gas 3. Grease a 20x30cm baking tin.
    3. In a medium bowl, stir together the oats, flour, bicarbonate of soda, dark brown soft sugar and cinnamon. Stir in the walnuts and melted butter. Mixture will be somewhat crumbly. Press half of the mixture into the bottom of the prepared tin. Spread the date filling evenly over the base. Crumble the rest of the crust mixture over the filling and pat down slightly.
    4. Bake for 25 to 30 minutes in the preheated oven. Cut into bars while warm. Dust with icing sugar when cooled.

    Really good and tasty! before I made them I read the reviews and based on them I didn't use any sugar with the dates mix, I'm glad I did, still very sweet and yummy.  -  10 Jan 2016
