Terrific Tuna Burgers

    This is a great way of getting more omega-3 fatty acids into your diet. Fresh tuna is formed into burgers with carrots, onion, chives, eggs and seasonings. Enjoy in a burger bun with tomato and lettuce.

    Ingredients
    Serves: 4 

    • 450g fresh tuna steaks, finely chopped
    • 1 carrot, grated
    • 80g onion, chopped
    • 25g chopped fresh chives
    • 2 eggs
    • 35g panko bread crumbs or regular bread crumbs
    • 1 tablespoon mayonnaise
    • garlic salt to taste
    • freshly ground black pepper to taste
    • 1 tablespoon olive oil

    1. In a large bowl, mix together tuna, carrot, onion, chives, eggs, bread crumbs and mayonnaise. Season with garlic salt and black pepper. Form into burgers.
    2. Heat oil in a frying pan over medium heat. Arrange burgers in the pan (only as many as will fit easily in the pan). Cook, uncovered, 10 minutes per side or until golden brown.

    This was a hit for my family. I modified my second recipe a bit based on what others here have suggested and enjoyed it even more. I added: fresh garlic (2 cloves, saute with carrots and onions then add to burger mixture) Worcestershire sauce (2 Tbsp) Lime Juice (1 Tbsp) Then I made a sauce to serve on the side that really compliments the burger (adjust to taste): Mayonnaise (4 heaping Tbsp) Worcestershire sauce (1 1/2 Tbsp) Lime Juice (1 Tbsp) fresh pepper & salt  -  02 Aug 2009  (Review from Allrecipes US | Canada)

    For me, this was a middle of the road recipe -- tasty enough to repeat, but only with necessary adjustments. Pros: includes veggies (with room for lots more), pretty healthy, unique way to cook ahi. Cons: overall taste is bland (if you use recipe as-is). I think a necessary ingredient to add here is dijon mustard, to enhance the flavor. A little Worcestershire sauce will help as well. Overall -- C+.
