    About this recipe: This moist fruit cake is vegan-friendly and super-easy to make. To ensure that the cake is vegan, use a dairy-free margarine. Enjoy thickly sliced for afternoon tea.

    Ingredients
    Makes: 1 20x30cm cake

    • 200g margarine
    • 475ml water
    • 290g raisins
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1 teaspoon ground allspice
    • 1/2 teaspoon ground cloves
    • 400g caster sugar
    • 375g plain flour
    • 1 teaspoon bicarbonate of soda

    Method
    Prep:15min  ›  Cook:55min  ›  Extra time:1hr cooling  ›  Ready in:2hr10min 

    1. In a saucepan combine the margarine, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Simmer for 10 minutes. Remove form heat and let stand until cool.
    2. Preheat oven to 180 C / Gas 4. Grease one 20x30cm baking tin.
    3. Stir the flour and bicarbonate of soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared tin.
    4. Bake at 180 C / Gas 4 for 45 minutes.

    I've yet to make this cake but without wanting to sound rude to Miss Bungle.... but if you actually read the first introduction to this recipe...Lynn the lady who gave this to us, strictly says to exchange the margarine for a dairy free based margarine instead to ensure that it is vegan. People should only criticize when you are absolutely sure that the recipe deserves it and i don't agree that this does. Lynn covered herself by making a point of exchanging the margarine at the begining - 18 May 2014

    Fantastic cake. I baked this as one of my co-workers can't eat eggs and I didn't want him to miss out on my birthday cakes! It initially looked sloppy, but baked perfectly. I dropped the cloves and allspice and replaced with 1tsp ginger - it came out almost like a certain Jamaica Ginger Cake that's available in the UK... Only one problem. It's dangerously moreish and even if it gets dry from being left (unlikely, with how fast it went in the office) it would be fantastic with some custard over it! - 24 May 2013

    I've not made this but it is not a vegan-friendly cake if you are using margarine - it contains buttermilk. - 15 Sep 2013
