Devil's Food Cake

    A delicious dark chocolate cake, which is packed full of flavour. Feel free to fill and decorate the cake with your favourite chocolate icing.

    Makes: 2 23 cake layers

    • 85g plain chocolate, chopped
    • 320g sifted plain flour
    • 40g sifted cornflour
    • 350g caster sugar
    • 1 3/4 teaspoons bicarbonate of soda
    • 1 teaspoon salt
    • 135g margarine
    • 325ml milk, divided
    • 1 teaspoon vanilla extract
    • 2 eggs

    1. Preheat oven to 180 C / Gas 4. Grease and flour two 23cm cake tins. In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm. Sieve together the flour, cornflour, sugar, bicarbonate of soda and salt. Set aside.
    2. In a large bowl, beat margarine until smooth. Add flour mixture, 250ml of the milk and vanilla. Mix on low speed until flour is dampened, then beat on medium speed for 2 minutes. Add eggs, remaining milk and melted chocolate. Beat on medium speed for 1 minute. Pour batter into prepared tins.
    3. Bake in the preheated oven for 30 to 35 minutes or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
