Creamy broccoli spaghetti

    This easy pasta bake is made in the microwave. Spaghetti is microwaved with cream of mushroom soup, broccoli and fried onions. Perfect student fare!

    Serves: 2 

    • 1 litre water
    • 115g spaghetti
    • 1 (295g) tin condensed cream of mushroom soup
    • 285g frozen broccoli florets
    • 110g tinned fried onions

    Prep:10min  ›  Cook:35min  ›  Ready in:45min 

    1. Place water in a 2 litre microwave-safe dish. Heat on high until bubbling, about 15 minutes. Break spaghetti in half and drop into heated water. Microwave on high for 10 to 15 minutes or until tender. Drain and set aside (keep warm).
    2. Cook broccoli according to microwave directions. Add cooked broccoli to spaghetti, reserving liquid. Stir in half of the fried onions and mushroom soup. Add reserved broccoli liquid. Toss thoroughly and top with remaining onions. Cover and microwave on high about 15 minutes or until top is crunchy. Let stand for a few minutes.

    I forwarded this recipe to my 19 yr. old daughter. It's her first year in college and she only has access to a microwave in her dorm. She hasn't stopped raving about it since she tried it.     i changed the noodle type to penne rigate and added a layer of cheese. i also decided to cook the noodles and broccoli and then combine everything in a baking dish and heat it for 20 minutes at 325. it was such a great tasting meal. the broccoli and french fried onions really added great flavor. next time i am going to go heavy on the french fried onions, but you will need to decide if the ingredients are balanced to your liking. some other ideas i had were mushroom or tuna. i am also considering going with a whole grain pasta the next time. this casserole is a great idea for a quick and surprisingly tasty microwaved dish, and has great potential to be a great oven baked dish as well.  -  15 Apr 2009  (Review from Allrecipes US | Canada)
