    About this recipe: A great way of sprucing up a traditional bowl of ice cream. The crunchy crumbles are sweet, warmly spiced and incredibly moreish. Spoon over vanilla ice cream whilst still hot.

    Serves: 2 

    • 2 digestive biscuits, crumbled
    • 4 tablespoons dark brown soft sugar
    • 1/8 teaspoon ground cinnamon
    • 30g melted butter
    • 1 teaspoon vanilla extract
    • 2 tablespoons caster sugar
    • 1 dash salt

    1. Preheat oven to 180 C / Gas 4. Butter a small baking tin.
    2. In a small bowl, mix together biscuits, dark brown soft sugar and cinnamon. Combine melted butter and vanilla, then stir in. Spread evenly in prepared tin. Sprinkle caster sugar and salt over the top.
    3. Bake in preheated oven for 15 minutes or until lightly browned.

    Cook's note

    If you're planning to use this on chocolate ice cream, try using orange or mint extract instead of vanilla and ground cinnamon.
