    About this recipe: This is a highly creative way of using digestive biscuits. They are crushed, mixed with sugar, baking powder, milk, egg and honey and baked as muffins. They are easy to make and oh-so-delicious.

    Ingredients
    Makes: 10 muffins

    • 210g digestive biscuit crumbs
    • 4 tablespoons caster sugar
    • 2 teaspoons baking powder
    • 250ml full fat milk
    • 1 egg, slightly beaten
    • 2 tablespoons honey

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Preheat oven to 200 C / Gas 6. Grease 10 muffin holes or line with paper cases.
    2. In a large bowl, combine biscuit crumbs, sugar and baking powder. Stir in milk, egg and honey; mixing just until moistened. Spoon batter into prepared muffin tin.
    3. Bake in preheated oven for 15 to 18 minutes, until a skewer comes out clean. Let stand for 5 minutes, then move to a wire rack to cool completely.
