Makes: 1 20cm square cake
200g plain flour
2 tablespoons cornflour
200g caster sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract

Preheat oven to 180 C / Gas 4. Grease and flour a 20cm square tin.
Sieve flour, cornflour, sugar, baking powder and salt into a large bowl. Add margarine and milk. Mix until smooth, then add vanilla and egg. Mix well.
Pour into prepared tin. Bake in preheated oven for 30 to 35 minutes or until a skewer inserted into the cake comes out clean.
