    About this recipe: A delicious cookie that is packed full of wonderful ingredients. They are made with corn flakes, oats, coconut and chocolate chips. Enjoy with a big mug of tea or coffee.

    Ingredients
    Makes: 72 cookies

    • 450g margarine
    • 400g caster sugar
    • 450g dark brown soft sugar
    • 4 eggs
    • 500g plain flour
    • 2 teaspoons bicarbonate of soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 110g corn flakes cereal
    • 120g porridge oats
    • 150g desiccated coconut
    • 500g plain chocolate chips

    Method
    Prep:25min  ›  Cook:10min  ›  Ready in:35min 

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl, cream together the margarine, dark brown soft sugar and caster sugar until smooth. Beat in the eggs one at a time, mixing well after each addition.
    3. Sieve together the flour, bicarbonate of soda, baking powder and salt; stir into the creamed mixture until just blended. Then gently mix in the corn flakes, oats, coconut and chocolate chips.
    4. Drop heaped spoons of the batter onto ungreased baking trays. Bake for 8 to 10 minutes in the preheated oven or until edges are lightly browned. Cool on wire racks.

    This recipe makes a huge amount of cookies . I'd recommend halving the recipe unless you have alot of mouths to feed ! Very tasty. I've eaten at least 6 whilst waiting for the 6 th tray to bake. I have at least 4 more trays of 12 on a tray to go in yet !! I think I'll attempt to freeze some. - 24 May 2015

    Nice interesting recipe and tastes good. I would say dont make your raw cookies bigger then a walnut as mine baked into each other and started to crisp while the insides weren't cooked properly. - 14 Sep 2013
