An incredibly moist fruit cake, which is quick to throw together. It's packed full of bananas and pineapple and is lightly spiced with cinnamon.
This cake is absolutely fantastic. I was really dubious when I saw how wet and oily the mixture was. However, the final cake is wonderfully moist and sticky. I would gladly pay money for a slice in a coffee shop. Delicious! NB I used groundnut oil instead of vegetable and only 275g pineapple as these were all I had, and baked in 2 separate cake tins using strawberry jam to sandwich together.
