About this recipe: An incredibly moist fruit cake, which is quick to throw together. It's packed full of bananas and pineapple and is lightly spiced with cinnamon.


Makes: 1 26cm tube cake

  • 375g plain flour
  • 400g caster sugar
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 3 eggs
  • 250ml vegetable oil
  • 450g banana, coarsely chopped
  • 1/2 (432g) tin crushed pineapple, with juice

  1. Preheat oven to 180 C / Gas 4. Grease and flour a 26cm tube cake tin.
  2. In a large bowl, mix together the flour, sugar, bicarbonate of soda, cinnamon and salt. Make a well in the centre and pour in the eggs, oil, bananas and pineapple. Mix well and pour into prepared tin.
  3. Bake in the preheated oven for 70 to 80 minutes or until a skewer inserted into the centre of the cake comes out clean. Let cool in tin for 10 minutes, then turn out onto a wire rack and cool completely.

This cake is absolutely fantastic. I was really dubious when I saw how wet and oily the mixture was. However, the final cake is wonderfully moist and sticky. I would gladly pay money for a slice in a coffee shop. Delicious! NB I used groundnut oil instead of vegetable and only 275g pineapple as these were all I had, and baked in 2 separate cake tins using strawberry jam to sandwich together. This recipe makes a huge amount of cake! - 25 Oct 2012
