About this recipe: These Dutch treats are known as boterkoek, literally translated to buttercake. The bars are similar to soft shortbread-like cookies. They are rich, buttery and incredibly delicious. Enjoy with a cup of tea or coffee.

Makes: 24 bars

  • 225g butter
  • 275g dark brown soft sugar
  • 250g plain flour
  • 1 teaspoon almond extract
  • 1 egg
  • 55g flaked almonds

  1. Preheat oven to 180 C / Gas 4. Grease a 23x30cm or similiar sized swiss roll tin.
  2. Cream together the dark brown soft sugar and the butter. Add the almond extract.
  3. Sieve and add flour to the creamed sugar mixture. Mix well.
  4. Separate the egg and add the egg yolk to the dough. Mix again.
  5. Press into the prepared tin and glaze with the lightly-beaten egg white. Sprinkle with flaked almonds.
  6. Bake in preheated oven for approximately 20 minutes. When cool, cut into bars.
